12 bars of our dark chocolate bar with Golden Berries, also known as Physalis. The fruit we use to make this bar is freeze dried, a cold dehydration process that preserves more of the heat sensitive antioxidants and the natural flavour of this exotic fruit. 

Golden berries are an exotic fruit and known as Colombia's queen of exports. Worldwide recognized as a superfruit due to its high antioxidant content, our goal to offer you a super healthy chocolate bar. 

We harvest the beans used in this chocolate bar from our heroes' farms before these are fermented and sun-dried, taking on these supremely important tasks ourselves. This makes us the only company in the UK to guarantee a full bean-to-bar production process and allows us to build strong and empathic relationships with farmers affected by extreme poverty as a result of the war in Colombia.

 

  • Made with just 3 ingredients: selected cacao beans. We profoundly believe the chocolate industry does not need to add extra cocoa butter to hide off flavors derived from poor traceability or post-harvest control.
  • Complex sensory experience: tasting notes usually perceived in this bar are tropical fruits, woods, spirits such us whisky and cognac. 
  • Full of real social impact: Elver has been fermenting and drying the cacao of our allied farmers for almost 8 years. He has the responsibility to develop the natural flavors of cacao in our post-harvest facility and make it easier for us to craft a truly differentiated chocolate.

WE BUY CACAO IN THEIR FARMS' ENTRANCE

The logistic cost in rural Colombia is extremely high. Our farmers live in mountains far away from the towns through hardly accesible roads. This is one of the reasons why intermediaries exist.We come to each of our farmers farm and pick up the cacao as a fruit, assuming the logistic costs.

WE START MAKING OUR CHOCOLATES FROM THE POST-HARVEST PROCESS

Ever wonder why cocoa butter is added to a chocolate bar when the cocoa bean alone naturally contains 50%-60% of cocoa butter?It is added to hide off-flavors from poor post-harvest (or lack of relationship with farmers) like bitterness, astringency and acidity.We do not need to do this as we control the fermentation and drying of all the beans in our bars.

WE EMBRACE THE CACAO BEAN TO MAKE THE HEALTHIEST PRODUCTS

We believe that respecting the cacao bean starts with recipes free of extra cocoa butter and where the only % of cocoa content comes from the bean, which is naturally full of antioxidants and other healthy compounds. Our recipes use other healthy and specialty ingredients but start from the concept that to make premium chocolates you have got to work on producing top quality beans.
